Pecan Pie

Made my first Pecan Pie over the Christmas holidays. Here is the recipe I used, which was adapted from the original because I didn't have certain items, and it was lovely. But, I discovered the most amazing thing afterwards. I froze it in slices in zip lock bags and found out that it is perfect to eat even when frozen!! Pastry and nuts are crispy and the filling is sticky as it does not freeze solidly.
Pecan Pie Recipe
Ingredients
- 1and a 1/4 cups light brown sugar
- 1/2 cup melted butter
- 2 eggs
- 1 tablespoon plain (all-purpose) flour
- 1 tablespoon milk
- 2 cups pecans
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar and the flour; mix well. Last add the milk and nuts.
- Pour into an unbaked 9-in pastry case. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done......mine took less time but that's Dubai ovens for you!!!
